- 1 small green sweet pepper, diced

- 3 cloves garlic, minced

- 1 can tomatoes, crushed

- 1/2 tsp red pepper flakes

- 1/2 tsp Black Pepper

- 1/4 tsp salt

- 1/2 tsp Hot Pepper Sauce

- 1lb Long Grain White Rice

- 3 cups of water

Give the mixture a gentle stir on top. If the rice is still too wet, take the lid off so the extra liquid evaporates. If the rice is a little dry, keep the lid on a little longer to give the rice more time to absorb the liquid.

 

5. Chicken Frank Corn Dogs

- Cornstarch, for dusting chicken franks

- 1 cup yellow cornmeal

- 1 cup of all-purpose flour

- 1 tbsp. granulated sugar 

- 2 tsp. baking powder

- 1 1/2 tsp. salt

- 1/4 tsp. ground red pepper 

- 1 cup + 2 tbsp. whole milk

- 2 tbsp. vegetable oil

- 2 tbsp. honey

- 1 large egg

- Vegetable oil, for frying

 

Make sure you pat down each hot dog with a paper towel to ensure they are dry. Then thread each hot dog into a 6-8inch Skewer leaving some room for the hand to hold.

Whisk together the cornmeal, flour, sugar, baking powder, salt, and red pepper in a medium bowl. In another bowl, whisk together the milk, vegetable oil, honey, and egg. Add the milk mixture to the cornmeal mixture and whisk until smooth. Let stand at least 5 minutes.

After adding oil to the pot and bringing it to boil while the oil heats up, transfer the batter to a tall glass that is taller than the hot dogs. Working with one hot dog at a time, dip the hot dog into the batter, twisting it to coat it completely with the batter. While still twisting, remove the hot dog from the batter and lower it diagonally in the hot oil, twirling it by the stick for 5 seconds to set the coating. Let go of the stick and fry until the hot dog is browned on all sides.
